I have a friend whose husband bought her a model K45SS KitchenAid mixer for Christmas. We are both about the same age, so it gave me pause to think about what I would have done these last 20 years without this culinary workhorse. I had to admit to myself that I would not have been able to churn out all the baked goods that have made my family and so many others happy.
I have never had trouble of any kind with the mixer. This machine has always been there when I needed it, from gourmet fudges, to cheesecakes, to chorizos and hot sausage, to the more prosaic like breads, bagels, sticky buns, and soft pretzels. For years while I catered, this machine made many an intricate, multi-tiered wedding cake. I must have made scores of gallons of frosting with my K45SS.
I do have the pouring shield, but do not use it. I have found it more beneficial to pulse the on/off switch when adding ingredients that tend to splash (liquids) or plume (powders, such as confectioner’s sugar or flour) when added to a running mixer.
When I make mushroom meringues, the whites must whip for a full 10 minutes. Doing that with other mixers can be a tedious chore. Bread doughs have to knead for 7 - 10 minutes. This has saved me from sore arms many a time. Furthermore, the comprehensive, orbital kneading action develops a strong gluten network. This lends a fine grain and moist crumb to yeast breads.
Making more complex items, such as a classic French buttercream, which calls for the addition of a hot stream of syrup, is easy, as well. But it’s not limited to just fancy baked goods, however. On Thanksgiving, I invariably make 5 pounds of mashed potatoes that are pureed perfectly. This is difficult to accomplish using a hand masher or a hand-held mixer.
Clean up is an easy matter. I find that a toothbrush helps make easy work of cleaning the flat beater. The bowl can be placed in the dishwasher, and an occasional wipe-down of the unit is all that’s necessary.
Granted, the cost is high for a mixer. However, it will pay for itself many times over with convenience, ease of use, versatility, as well as longevity.
