The design of this machine is appealing, but the physical assumptions seem flawed. The bowl spins, but that means that the force of mixing is dependent on the adhesion between the bowl and its contents. Unfortunately when making bread you add flour, this reduces adhesion. The bowl spins and not much will happen sometimes. Of if something happens, it does so very slowly.
The arm of this device is used to control the amount of action. It is spring loaded and can be very difficult to adjust or get to stay in one place, especially when you’re dealing with a lot of heavy sourdough.
The last problem is the balance problem, a spinning mass of heavy sourdough can, as the amount of dough increases, cause the mixer to start to walk, off the countertop if you don’t hold it down.
