The Electrolux Assistent is the same machine as the Magic Mill Assistent. This machine was first introduced in Sweden in the late 40’s, so it definitely has a track record! Though the styling of the base has changed along with other internal improvements, the basic concept of the machine remains the same: rather than having a motor hanging over the top of the food, the motor for the machine is in the base. Rather than having beater(s) dragging through the food, a contoured spiral beater and scraper mix through a stirring motion unique to this machine. Unlike mixers with flying beaters, the bowl moves in a circular motion on the base. For bread, the innovative roller and scraper can be used for smaller recipes, and a large dough hook attaches to the side of the machine for larger batches.
I have owned two Kitchen Aid machines, I own two Bosch Compact machines and one Universal, along with a conventional Sunbeam. I have been an avid bread baker for 25 years, though I actually make more cakes. I also have two grain grinders: the grain attachment for my Champion juicer and the Magic Mill III. I enjoy and concentrate on whole-wheat recipes for bread, and also for many cakes.
My Assistent is now approaching 10 years of age; I bought it from an excellent Magic Mill dealer in San Antonio. She was the type of dealer to look for if you can find one. When I bought the mixer, she invited me to her kitchen for classes she gives in this mixer. Being out of town, I was unable, so she invited me to come at a time I could make. She walked me through a batch of whole wheat bread, ground fresh, all the way through until the bread came out of the oven. Many Magic Mill dealers will work with you, something unheard of with stores.
In 10 years of quite constant use, I can say the mixer has never failed, never given me any problems whatsoever. My white base has a couple of small stains from food coloring, lightened with bleach. Other than that, it looks brand new. It is hard to describe accurately how different the Assistent mixing bowl can be than other mixers. It is a high quality stainless steel, weighing at least twice what a Kitchen Aid bowl weighs, much thicker. In 10 years of use, mine looks basically new. No dents, no wear. I have purchased a second nylon roller, not expensive, for convenience when mixing more than one item. I can’t count the number of large batches of bread that the dough hook has worked; it also appears as new. Incidentally, it doesn’t get hot like a Kitchen Aid, and I can do batch after batch of whole wheat bread, cookies, whatever I want without concern that I’m burning it up. What more can one ask of a kitchen machine?
Pound cakes are one of my specialties. With the superlarge mixing bowl I can double the average recipe. With the roller/scraper, even when the mixing bowl is virtually full there is no problem with spattering. This is why the bowl doesn’t have a splash cover; it doesn’t need it! Unlike my little Sunbeam, or the Kitchen Aid, one doesn’t worry about slicing fingers with flying beaters, as they aren’t used. Butter and sugar are creamed beautifully smooth.
I’d also like to mention that this is the quietest mixer I own. For large whole wheat bread recipes, the 10-minute timer is useful and you can actually work around the mixer without earplugs. The Bosch is not noisy, but this machine beats it.
I also own the accessory meat grinder accessory. It is at least twice the diameter of the little Kitchen Aid grinder, and is made of very heavy cast aluminum. If you grind much meat, for example deer meat, you’ll do your work in less than half the time. It feels commercial grade, and as with my mixer, mine has shown no wear at all in 10 years of use.
Though presumably egg whites can be whipped with the standard bowl and roller/scraper, I own the accessory twin whisks and matching plastic bowl–again, not too expensive. I enjoy making angel-food cakes, often requiring 18-20 egg whites. This setup resembles the whisk assembly for the Bosch Universal, but the bowl appears to be greater in capacity. The efficiency of these twin whisks is something I’ve had to demonstrate to friends because they wouldn’t believe how well they worked. Oh, I know all about the copper bowl accessory for the Kitchen Aid, all about the warnings about any fat at all in the mixing bowl, etc. All I can say is that your egg whites will whip at least twice as fast as a ‘conventional’ head mixer, obtaining the stiffest peaks possible in the plastic bowl. The whisk bowl has a convenient locking cover for adding flour, but I work most of the time without it. The only weak point I’ve found in the whisk bowl is the plastic toothed shaft that turns the whisks. After several years, it cracked and I bought a couple of replacements for $10 each. The whisks are like new.
I’ve had a demonstration of the blender, but haven’t purchased it. The Bosch blender is superb, so I don’t need it.
Do I sound like a fan? Well, I am. There is a learning curve associated with using the roller/scraper instead of conventional beaters, not long, but there. This machine is not inexpensive; buy it if you need the durability and longevity for which it is designed. If you do occasional mixing, or if you don’t do more than a two-loaf bread recipe, buy a Kitchen Aid. They’re sold everywhere and easily replaced. This is a machine to buy for the long run. I’m still fairly young, so I expect to enjoy my Assistent for at least another 20 years!
